Creamed Goat Cheese with Fresh Herbs
serves 8-10
Ingredients
- 1/4 lb goat cheese
- 8 oz cream cheese
- 1 T parsley, chopped
- 1 T tarragon, chopped (or 1/2 t dried tarragon)
- 1 T chives, chopped
- 1 ea scallion, 1 inch pieces
- 1/4 C whipping cream
- salt & pepper
- thinly sliced pumpernickel bread
Instructions
- Process the parsley, tarragon and chives until minced, then set aside.
- Process the cream cheese, whipping cream, goat cheese and pepper until smooth. Season to taste.
- Add the herb mixture to the cheeses and process until well mixed.
- Refrigerate 2 hours or until mixture is of spreading consistency.
- Garnish with parsley sprigs and serve with pumpernickel bread.
